When food decomposes in landfills, it produces methane, a greenhouse gas 20x stronger than carbon dioxide. However diverting food waste from landfills through composting is a step in the opposite direction. Composting is a regenerative agriculture process that can lead to carbon sequestering. Rich biodiverse soil draws down and sequesters carbon from the atmosphere! So it's a way to take agriculture, necessary to our survival, from being environmentally harmful to being helpful. It’s something we can take into our own hands, now, without waiting for industries or policies to change.

It’s crazy to think truck loads of food drive right through this area, one of the largest food deserts, on their way to the landfill every day. Most people have no idea about this, and neither did we. But once we learned about it, we took action, and it’s amazing to see how it’s grown.
